Once a nice, hearty soup has been cooked, it is unwise to either let it go cold or to accidentally boil it while trying to keep it at the correct temperature. By using a soup warmer not only do you remove these problems, you also free up space in your kitchen. In a commercial kitchen, this is even more important than usual. A finished soup can be stored almost anywhere in the kitchen (allowing it can be plugged in) as well as served up to customers directly near the point-of-sale.
