Combi Ovens
A combination of wet and dry cooking
The main feature of a combi oven is that the humidity can be precisely set. This means that it can be used to produce a strictly dry heat, for breads and pastries, or a steam heat that is good for veggies and poaching fish. This functionality gives a great deal of power in the hands of a chef since they can choose just how much steam to use (if any at all).
These commercial grade combi ovens come in a variety of sizes with differing programmable control panels. Once set up, the combi oven quickly becomes a huge asset to a busy restaurant kitchen.
