This particular jacket kettle although large at 76 litres is smaller of the available range but has the same sturdy design. Other kettles are between 114 and 379 litre versions.

Operation shall be by:
• Direct steam at a minimum of 5 PSI (34kPa) and a maximum of 35 PSI (241kPa).
